It’s a new year but I’m determined to stay on track and keep my recipes as healthy as possible! Post® Honey Bunches of Oats® made it super easy when making my favorite Mexican Un-Fried Ice Cream! We can all agree that we still have to enjoy something sweet every now and them, but does it really have to be an un-healthy choice… I say no!

Post® Honey Bunches of Oats® already gives you great choices for a healthy start to your morning, the Almond and Strawberry are my favorites. I know that I’m getting all the whole grains and nutrients to keep me going! But I thought it would be fun to include my favorite cereal for an afternoon dessert, and it really does taste just like a Fried Ice Cream you would have at your favorite Mexican restaurant but this one you can enjoy guilty free in your own home!

Mexican Un-Fried Ice Cream
This is the perfect recipe to still enjoy the taste of a Mexican Fried Ice Cream minus the "Fried" part!

Instructions
  1. Roll Vanilla Ice Cream into desired size balls, and place in the freezer for 2-4 hours.
  2. Place the Post® Honey Bunches of Oats® into a plastic bag and crush.
  3. Mix melted butter, sugar and cinnamon together.
  4. Pour crushed Post® Honey Bunches of Oats® and mixture into a baking sheet and roll each ice cream ball covering it completely. * wrap the ice cream balls in foil to keep the coating on it until ready to eat!
  5. Add Reddi Whip, cherry on top and enjoy!
