This is one of our favorite weekend meals. Perfect on a Saturday movie night, because you can just munch on it as the night goes on. I first had one at the Mexican Restaurant I worked at a long time ago, I loved it so much, I ordered it every time I worked for lunch for my first year!
Here’s what you need:
Re-fried Beans (canned will do)
Munster Cheese (shredded)

Place a few chips and make a single layer on a foiled cookie sheet, add the beans and spread evenly over chips, then sprinkle the cheese. Put it in the oven for about 15 min, until cheese is melted. Then place the rest of your chips on a tray and carefully slide the thin layer of chips, beans and cheese onto the remaining chips, this helps the chips not to be soggy as this can happen quickly when heating in the oven. I like this technique because the cheese is completely melted. It’s just not the same with sprinkled cheese. Trust me! Once your done adding the chips and beans together you can cut up lettuce, tomato and avocado for topping.
My family loves to add meat, you can use steak or chicken fajita both works great! Just cook it up and place it over the cheese before your cold toppings. This takes no time at all, and like I said it’s perfect for a weekend night!
