Growing up in my father would make homemade empanadas, it’s kind of a staple recipe in Mexican households! He would make the sweet ones filled with pina (pineapple) or calabaza (pumpkin). As I got older my Puerto Rican friends would invite me over for dinner and that was when I first had beef filled empanadas…. they were so amazing, and this recipe has become a family favorite in our household!

What has been wonderful about the world of blogging for me is the amazing, talented and creative people that I have the pleasure of connecting with! People like Hipatia Lopez of New Jersey, the creator of the Empanada Fork. She had an idea, that she turned into a reality, to make her dreams come true. A strong educated wife and mother, Hipatia did all the steps needed to have her product created, patented and now she is one of the 5 finalist in the HSN Project American Dreams! How amazing is that!!! Hipatia had an idea for making the Empanda Fork, when cooking for her large Ecuadorian and Dominican families, she would be responsible for making close to 100 empandas and she could not find anything to make the job a little easier… so she created one! I can tell you from personally using the Empanada Fork myself that it was so easy to use and it was so much better then using a regular fork! Hipatia has been featured on Telemundo and won the Women of the Year award given to her by the Hispanic Chamber of Commerce of New Jersey!
