
This Ultimate Corn Casserole recipe was such a hit over the holidays! There is never a crumb left behind, its honestly one of those dishes that you can’t just have one serving of and the best part it’s so easy to make.. just mix and bake!

I learned about this recipe when I was working in a Mexican Restaurant in my teens, one of my co-workers brought it to share around the holidays and I absolutely loved it. I never had the chance to write down all the ingredients exactly, but I was able to put together the recipe from memory the best I could! That’s how yummy this corn casserole is, I never forgot it after 20 years!

- 1 Can Whole Corn (drained)
- 1 Can Cream Corn
- 2 Eggs Whisked together
- 1 c Sour cream
- 1/2 c butter (melted)
- 1 bx Jiffy Corn Bread Mix
Ingredients

- Take all the ingredients and mix together in large bowl.

- Grease a 9x9 pan and pour in all the ingredients. Cover with foil.

- Bake at 350 degrees for 45 min covered. I take the foil off for the last 10 minutes so it can be a golden brown.

Cut into squares and serve as a side dish or appetizer. It's the perfect recipe for potlucks or to bring to any party!
